I loved the low cal FAST recipes that you all were posting on the old boards? Will you post some more? I so appreciate new ideas!!! I feel like I am always making the same 3 or four meals!!!
i made this last night and it is absolutely yummy!!!
barber foods chicken grillables (i bought at sam's) 140 cal each.
i cooked 4 of them on our foreman grill (but you can bake them). when then are almost done, i rub on a spoonful of bbq sauce and add a peice of swiss cheese to each. when i take them out i also pour on some verde salsa made from tomatillos. you can buy that salsa in a jar at walmart with the mexican food. it's herdez brand. not spicy at all, but very tasty and i put it on lots of stuff. each is just a little over 200 cal once you add the cheese and bbq sauce. i don't add any kind of salsa as calories. when you add veggies, then your dinner is only 200 for one or 400 for 2! when i made this last night, i made it with corn (steam bags) and some fresh cucumber and tomatoes. very delish! and my husband devoured it!!!

i do come up with the recipes to an extent. i love carbs but they hate my body. so i will not use bread, potatoes and pastas. that basically means i cook lean meats and tons of steamed veggies. i usually always melt swiss cheese on top of chicken b/c on peice of swiss is about 50 cal, plus lots of salsa!

i'm prob driving you guys crazy with these meal ideas, but this is a really really yummy one, super easy and the best part is my husband devours it!!
taco rollups
brown one pound lean hamburger meat, i add garlic salt and chilli powder. get a head of lettuce and pull off whole leaves. add 1/8 hamburger to each leaf. i top with lots of salsa and fat free cheddar cheese. roll up like a tortilla. they are large and soooo tasty. you can have 3 large ones for 300 calories and it's so much food, you don't hafta make any sides!! my husband, who loves unhealthy food, adores these. he says it tastes just like a taco with out the shell. enjoy!!!!!!!

I also found a site called hungry girl ( http://www.hungry-girl.com/index.php ) That has a ton of 300cal recipesand turns old fatty recipes into new healthier ones! Yummy
Haha and I have to have carbs (a certain amt a day) r/t the diabetes so I put almost everything in a wrap! or a half of one....and weight watchers bread is great because i can have a sandwich with only 110 cals for 2 peices of bread. And I love french toast so it is great for that!
I have to reamember to add lots of fruit to my diet when I eat cuz i can't have it alone (stupid diabetes). Do you count veggies as part of your 300cals? I have not been.....But I still need my stomach to shrink cuz I am starving ALL THE TIME!!
OK, this recipe isn't as simple as one listed before, but it is TO DIE FOR delicious. Each serving is good sized, 330 cal and I add a serving of corn or green beans to go with it.
INGREDIENTS ::
4 skinless, boneless chicken breast halves (about 1lb)
2 thick slices of reduced fat Jarlsberg cheese (or reg. swiss)
4 slices of prosciutto (can use thin sliced deli ham)
1/4 cup all purpose flour
3/4 cup Italian seasoned fine dried bread crumbs
1 large egg white
1 tablespoon of 2% milk
3 teaspoons of extra virgin olive oil

Cut chicken breasts in half crosswise so there are a total of 8 pieces. One piece at a time, place between wax paper or plastic wrap and pound flat so they are uniform thickness (about 1/2 inch thick). Preheat your oven to 350 degrees.
Cut each slice of cheese in half so there are a total of 4 pieces. Place one slice on cheese on one piece of chicken and trim cheese to fit. Place a prosciutto slice on slice of cheese, folding it so it fits neatly. Top with another chicken breast half. When finished, you should have 4 stuffed chicken breasts.
Place the flour in a wide, shallow plate and the bread crumbs in a separate plate. In a wide, shallow bowl beat the egg white with the milk until blended.
Dredge a stuffed breast in the flour, coating it evenly. Turn it through the eggwhite mix and then dredge in the breadcrumbs to form a light, even coating. You should use your fingers to help the crumbs stick to the chicken (this can get a little messy).
Over medium-high heat, warm 1 1/2 teaspoons of the olive oil. Add the stuffed breasts and cook until browned on the bottom (3 to 4 minutes). Add remaining olive oil to the pan around the chicken and turn the breasts (be careful...they can fall apart...) and brown the second side - 3 to 4 min longer.
Transfer the chicken onto a baking sheet and place in the oven until chicken is fully cooked (opaque all the way through) - about 15 minutes.
Did anyone watch that new show that was on Lifetime a couple months ago called Cook Yourself Thin? I really liked the show because they showed "real" foods like mac & cheese and lasagna and then substituted some of the ingredients for healthy ingredients. The lasagna was made with spinach and mushroom! I was hesitant at first but it was really good. Even my DH liked it. I bought the book too. The only think I don't like is that they don't include any nutritional information except calories per serving. I have made a lot of the recipes and they are really good. Some yummy desserts too. 2 garlic cloves
salt
pepper
(can add allspice if you want)
Let the chicken marinade for two hours, then grill. I love it because it's so full of flavor and the leftovers are yummy too. I always make extra so that I can use it to make chicken salad with low-fat mayo. Once you try it that way, you'll never go back to using regular old chicken! And if you're feeling particularly feisty, there's a greek sauce you can make to dip the chicken in.......
1/2 cup light mayo
1 clove garlic, minced
2 Tablespoons lemon juice
1 Tablespoon fresh minced parsley (dry is fine.......that's what I use)
Dash of hot pepper sauce
I've also joined a site called sparkpeople.com where I can track how many calories I'm eating per day, and they have a sister site with TONS of really great low-fat recipes, each of which contain the nutritional value. And if you want to type in your favorite recipe and FIND OUT what the nutritional value for a serving is, they have a section for that as well. It's great!
